I shot a bunch for an old woman one time and she thoroughly cussed me out for only shooting them in the head.  Said I ruined the best part.

There is a really nasty prion related disease that you get from eating squirrel brains... the rest of the meat is wonderful; even compared to wild rabbit.  Squirrel is definitely my favorite rodent, much better than ground hog and much much better than muskrat.  Hmmm... smoked muskrat quite the experience.
