About the bread dough, You need to learn the technique of rolling the dough with your hands into a bowl shape. If i was there with you I could teach you in a minute. There's probably youtube videos on it. It's kind of like while you roll the dough you are tightening it up with the dry skin on top.


For pastry, the cutter is just an extra. Just try to keep everything as cold as possible. You can make the pasty dough with your hands, they should just be cold. Make sure it's moist but not too moist and don't fuck with it.

Good things to know!  Is that culinary school talking?  I will look it up.  This is a heavy, rich dough rolled up with filling and spreads like a bitch; fortunately I still have the el-cheapo one my sister got me when I got my first apartment.

So what is Reverend Michael Carter vol 2 talking about today?

Are we talking pastry? It sounds like it. Think of it this way, when you put the cold butter in what you are trying to do is make little slivers of nothing, because in the oven it will melt, so where the butter used to be there will be air, nice and flakey dough around it.


edited to add, the butter has to be cold otherwise there is no flakiness, I think that is why the pastry cutter came in vogue, you can throw it in the freezer

Rolled up filled yeast bread with a thick crumb topping.  I will try the hand thing next time I make crust.  Thanks!

Couldn't tell ya. I'm listening to the Wolfman Jack show on KCAA while waiting for the Hoaxmeister. I wonder where they found these old tapes. Wolfman sounds fairly young. I'd place the tapes in the mid 70's.

I turned it on and they are talking politics and muslims.

Yes, there is a technique. what the heck are you making? There is a limit to how much you can make the dough act like how you want. lol I have no help for you if you don't have any flour.

Trying to make taro-filled rolled-up bread like they sell in Filipino stores.  But the dough recipe is the same one I always use for julekake and hveteboller.  You stir it together minus a cup of flour, then dump the lump out on the board and add only as much flour as it takes to hold together and knead.

I made a gorgeous braided wreath with it last Christmas but it spread and filled in and came out like a blob, just like Grandma's.  No wonder she never did anything else with it hahaha.

I don't know any of those breads you mentioned so I will have to get back to you on that. It sounds like the dough wasn't kneaded enough and needed more flour. It's gluten that holds everything together which is formed by kneading. I've never used taro. I am interested in it though. It's Hawaiian too.

Not at all!  That's what I've read, so I've kneaded it until I'm exhausted.  But my aunt, who makes the best hveteboller in the world, swears she just stirs it around a little.  But she's a little territorial, so I think she's trying to throw me off.  Good to have confirmation from a professional.
