Morning all. Happy 4th of July weekend. The patriotic shows, specials and music abounds all over the radio. Nothing compared to whats going on Monday. I hope everyone has a grand weekend. Be safe where ever you are and enjoy family, friends and if you get time, spare a thought on why we celebrate the 4th.

I'll be up in the woods until at least Tuesday or Wednesday. Treating myself to a pound of ribs from a new place that opened up near the lake. Should go great with the sweet corn I roasted up the other night.

Why would you roast corn ahead of time?

Would it not be better eaten if it was served right after roasting?

Never had crawfish... Must be similar in taste to tiny lobsters?

Hmm. Well, really you taste the spices not the meat. Interesting to think about, I don't think I've ever eaten them without any spices or boil or in another dish with same. But, then again, never had lobster without butter etc also but I suspect the meat would taste similar. Lots more work to get your fill with mudbugs though. But that is the fun, drinking beer all day and boiling up batches.

Sounds like a party to me. I don't think we can get them here in these parts. I could be wrong.

We usually get the lobster fresh from the ocean. I tend to prefer the smaller ones ( we call them canners ) the meat is not as tough and allot more flavorful than the bigger ones.

I usually wait until the last batches and use the rest of the time drinking beer, talking, cooking etc because the last batches the boil has boiled down and the stuff is very spicy! The only issue is planning. One time we over-bought and I had to release several sacks of crawdads into my creek. Might've upset the eco-system but the coons, bass, and catfish were loving it! Other times folks brought other folks and we had to run out and buy more.
ps: would be nice to be able to get fresh lobster easily here. Ha. Speaking of crustaceans (I think.) One time I went up to MD, where crab is deal. It was out of season but I still wanted some done the Chesapeake Way. It was good, asked the guy where he got the crab....from down here on the Gulf Coast. Haha. But up there they usually steam them, not boil, which I actually like better.

Been a long time since I've has crawfish but if I remember correctly, it tastes a little like shrimp and lobster.
