For catering events we would hollow out melons to use as serving vessels for cold salads and cold soups.  I did a cucumber/melon soup and served it in halved honeydews.

I've been really lucky with the ones I've been getting from Costco the last 2 months.  All have been very good throughout.  And Costco melons are nice and big and plump.
