The condiment is not as important as choosing the correct wine.

Such a discussion will inevitably lead to racial profiling.   Is it Angus? Is it grass-fed steer? etc.

Generally speaking, I would stick with any good tangy mustard. Don't bathe it in A-1. That's for white trash and lunch at The Sizzler.

Just watch the goddamn house wine and demand an unopened bottle of whatever is chosen. Restaurants are sneaky bastards.
